Basil Spinach Pesto

This is one of my favorites – and such a great go. I like to make up extra and freeze it in small containers..the ice cube tray has failed me every time- I just can not get them to pop out 😦 . I typically start out by tossing the pesto over pasta, with added pine nuts and small pieces of sautΓ©ed chicken. Β Whenever Basil Spinach Pesto Pasta is on the menu, you can guarantee Caprese Paninis are coming up! Grab the Panini Press, bread, beefsteak tomatoes, fresh mozerella & spread basil pesto on each slice of bread – delicious. Another easy fix? Spread the pesto over a chicken breast and bake it — Baked Pesto Chicken. The extra step of needing the food processor/blender pays off in the long run by having this sauce on hand to make lots of other tasty, healthy meals.


– 1.5 c Baby spinach leaves

– 3/4 c. Fresh basil leaves

– 1/2 c. pine nuts

– 1/2 c. grated parmesan cheese

– 4 cloves garlic, peeled & quartered

– 1/2 tsp sea salt

– 1/2 tsp black pepper

– 1 tbsp fresh lemon juice

– 1/2 tsp lemon zest

– 1/2-1 c. olive oil (Adding extra olive oil will help it go further if trying to make extra meals)

***Blend in Food Processor/Blender. Enjoy!

Use as a dip with fresh bread, Spread on paninis, toss over noodles with pine nuts & chicken, or spread over chicken & bake …Have other uses? Please share!
